The current CDC Vessel Sanitation Program standards require passenger self-service buffet arrangements to include handwashing facilities at major entrances on newer or substantially modified installations, linking the apparently informal buffet directly to engineered public-health controls. THE LABOUR BEHIND “UNLIMITED”
Abundance is sustained by cooks, provision stores, dishwashers, cleaners, servers and supervisors working behind the passenger-facing display; food must be prepared, transported, replenished and removed continuously even when passengers experience the buffet as simply “there.”
Hochschild’s emotional-labour framework is also relevant because crew must maintain hospitality while correcting hygiene problems, directing queues or responding to passengers frustrated by shortages, crowding or unavailable tables.
The institution therefore manages both food and feelings: scarcity must be corrected quickly because visible shortage contradicts the promise of abundance.
THE HIDDEN SYSTEM
The buffet demonstrates how cruise ships organise mass behaviour without appearing to ration or command. Choice is genuine, but it operates inside carefully constructed limits involving architecture, sanitation, staffing, logistics and social convention.
What passengers see is plenty. What makes plenty possible is control.
